Description

A refreshing tropical cocktail that merges classic mimosa flavors with pineapple juice and coconut rum, perfect for brunch.


Ingredients

  • 3 ounces pineapple juice
  • 1 ounce Malibu (coconut rum)
  • 3 ounces Brut champagne
  • 0.5 ounces grenadine
  • 1 pineapple wedge (for garnish)
  • 1 maraschino cherry (for garnish)

Instructions

  1. Pour the pineapple juice into a champagne flute or wine glass.
  2. Add the Malibu rum.
  3. Top your drink with brut champagne.
  4. Cautiously layer the grenadine along the edge of the glass.
  5. Garnish with a pineapple wedge and maraschino cherry.

Notes
