Description

A nutritious and delicious dish that combines creamy avocado with savory tuna, perfect for a quick meal packed with flavors.


Ingredients

  • 2 slices bacon, diced
  • 2 tablespoons mayonnaise, divided
  • 1 teaspoon golden balsamic vinegar
  • Pinch garlic powder
  • Pinch black pepper
  • 1 scallion, diced
  • 5-ounce can white albacore tuna, drained
  • 1/4 teaspoon Sriracha hot sauce
  • 1 large ripe avocado

Instructions

  1. Saute bacon in a small nonstick skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain excess grease.
  2. In a medium bowl, whisk together 1 tablespoon of mayonnaise, vinegar, garlic powder, and black pepper. Fold in scallion and drained tuna until combined.
  3. In a small bowl, whisk remaining mayonnaise and Sriracha for a spicy drizzle.
  4. Cut avocado in half, remove the seed, and fill with tuna mixture. Sprinkle with crispy bacon and drizzle with Sriracha mayo.

Notes

Store the prepared tuna mixture in an airtight container in the refrigerator for up to 2 days. Assemble the stuffed avocado fresh to prevent browning.
