Description

These Strawberry Lemon Brownies are a must-try! They’re sweet, tangy, and oh-so-delicious. Perfect for weekend gatherings or a quick treat during the week. Your family will love them!

Ingredients

Scale

1 15.25 oz box of strawberry cake mix
1/2 cup fresh strawberries chopped
1/3 cup lemon juice
2 large eggs
1 cup powdered sugar
1 tablespoon lemon juice add a few extra drops if needed for desired consistency

Instructions

1. Preheat the oven to 350 degrees.
2. Line an 8 inch square baking dish with parchment paper and spray with cooking spray.
3. In a large mixing bowl, combine the cake mix, strawberries, lemon juice, and eggs with a hand mixer or fork until smooth.
4. Pour batter into the baking dish and bake for 18 to 20 minutes or until set. To test, insert a toothpick into the middle of the brownies until it comes out clean.
5. Let brownies cool for 10 minutes before removing the parchment paper from the pan.
6. Make the glaze by combining the powdered sugar and lemon juice until smooth.
7. Pour glaze over brownies and over the edges. Let cool completely on a cooling rack and cut into squares.

Notes

Fresh vs. Frozen Strawberries: Fresh strawberries work best in this recipe to prevent excess moisture. If using frozen, thaw and pat them dry to avoid a soggy texture.

Glaze Consistency Tip: If the glaze is too thick, add a few extra drops of lemon juice. If it’s too thin, mix in a little more powdered sugar until it reaches a pourable consistency.

Enhancing Flavor: For a more intense strawberry-lemon flavor, add a teaspoon of lemon zest to the batter and a few drops of strawberry extract if desired.

Storage Advice: Store brownies in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days. The flavors intensify as they sit, making them even more delicious the next day!
