Homemade Reuben Bake is a must-try! It’s perfect for family gatherings or cozy weekends. Simple to make and super tasty, everyone will love this savory dish! Enjoy it warm and watch it disappear!

Ingredients

Scale
  • 1 package of crescent roll dough (8 ounces)
  • 1/2 pound of corned beef, sliced thin
  • 1 cup of sauerkraut, drained well
  • 1 cup of Swiss cheese, shredded
  • 1/4 cup of Thousand Island dressing
  • 1 teaspoon of caraway seeds, optional
  • 2 tablespoons of butter, melted

Instructions

  1. Begin by preheating your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish.
  3. Unroll half of the crescent roll dough and press it into the bottom of the prepared dish to form a crust.
  4. Evenly layer the sliced corned beef over the dough.
  5. Spread the drained sauerkraut on top of the corned beef.
  6. Drizzle the Thousand Island dressing over the sauerkraut.
  7. Sprinkle the shredded Swiss cheese on top.
  8. Unroll the remaining crescent roll dough and place it over the filling, pressing to seal any gaps.
  9. Brush the top with melted butter and sprinkle caraway seeds if you like.
  10. Bake in the preheated oven for 20 to 25 minutes, until the top is golden brown.
  11. Carefully remove from the oven and let it cool for a few minutes before slicing.
  12. Serve warm and enjoy your delicious homemade Reuben bake!

Notes

Draining Sauerkraut:

Ensure the sauerkraut is well-drained to prevent excess moisture, which can make the bake soggy. Press it in a colander or squeeze it gently with paper towels.

Corned Beef Alternatives:

If corned beef isn’t available, pastrami, turkey breast, or even roast beef can be used as substitutes. Adjust seasoning if needed.

Cheese Options:

While Swiss cheese is traditional, you can experiment with Gruyère, provolone, or cheddar for a different flavor profile.

Crescent Roll Dough:

If crescent roll dough isn’t available, puff pastry or homemade dough can be used. For a gluten-free option, use gluten-free crescent roll dough.
