Description

A delicious tropical variation of banana bread featuring ripe bananas, crushed pineapple, and shredded coconut.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 very ripe banana, mashed
  • 20 oz can of crushed pineapple in juice, not drained
  • ¼ cup shredded coconut, sweetened

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and sugar until creamy.
  3. Add the eggs and mix until well combined.
  4. Incorporate the mashed banana and crushed pineapple into the mixture.
  5. In a separate bowl, combine the flour, baking powder, baking soda, and salt.
  6. Add the dry ingredients to the wet mixture and stir until just combined.
  7. Stir in the shredded coconut.
  8. Pour the batter into a prepared loaf pan.
  9. Bake for 1 hour.
  10. Allow the bread to cool completely before removing from the pan and slicing.

Notes

For healthier alternatives, consider using whole wheat flour instead of all-purpose flour or replacing sugar with honey.
