Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 very ripe banana, mashed
- 20 oz can of crushed pineapple in juice, not drained
- ¼ cup shredded coconut, sweetened
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and sugar until creamy.
- Add the eggs and mix until well combined.
- Incorporate the mashed banana and crushed pineapple into the mixture.
- In a separate bowl, combine the flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet mixture and stir until just combined.
- Stir in the shredded coconut.
- Pour the batter into a prepared loaf pan.
- Bake for 1 hour.
- Allow the bread to cool completely before removing from the pan and slicing.
Notes
For healthier alternatives, consider using whole wheat flour instead of all-purpose flour or replacing sugar with honey.
