Description

A delectable fusion of crunchy hash browns and creamy avocado, perfect for a quick and nutritious breakfast.


Ingredients

  • 4 (2.25 ounces each) frozen hash brown patties
  • 1 ripe avocado
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon sriracha
  • Salt and pepper (to taste)
  • 4 large eggs (fried, poached, or scrambled)
  • 1/2 cup salsa
  • 1/4 cup crumbled feta cheese (or cotija)

Instructions

  1. Lightly mash the avocado with a fork until smooth but still textured. Mix in lemon juice, sriracha, and some salt and pepper. Taste and adjust seasoning if desired.
  2. Place frozen hash brown patties in the air fryer basket in a single layer. Air fry at 400°F for 12 minutes, flipping halfway.
  3. While the hash browns cook, prepare the eggs as desired (fried, poached, or scrambled).
  4. Remove hash browns from the air fryer and top each with a quarter of the mashed avocado, a cooked egg, fresh cracked pepper, 2 tablespoons of salsa, and 1 tablespoon of cheese.
  5. Serve immediately and enjoy!
