- 2 pounds boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 1/4 cup bourbon
- 1/4 cup brown sugar
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon cornstarch
- 2 tablespoons water
- Sesame seeds for garnish
- Green onions for garnish
- Cooked rice for serving
Instructions
- In a mixing bowl, whisk together the soy sauce, bourbon, brown sugar, minced garlic, and minced ginger. Add the red pepper flakes if desired.
- Place the chicken thighs into the slow cooker and pour the sauce over the chicken. Stir well to coat.
- Cover and cook on low for 4 to 5 hours until the chicken is tender.
- In a small bowl, mix the cornstarch with water to form a slurry. Stir this mixture into the slow cooker in the last 30 minutes of cooking to thicken the sauce.
- Serve the chicken over cooked rice, garnished with sesame seeds and chopped green onions.
Notes
For a healthier version, use skinless chicken breast and replace brown sugar with honey or maple syrup. Add vegetables like bell peppers or snap peas for increased nutrition.
