Description

A delicious slow-cooked meal featuring tender chicken thighs simmered in a rich, sweet, and savory bourbon sauce.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup bourbon
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Sesame seeds for garnish
  • Green onions for garnish
  • Cooked rice for serving

Instructions

  1. In a mixing bowl, whisk together the soy sauce, bourbon, brown sugar, minced garlic, and minced ginger. Add the red pepper flakes if desired.
  2. Place the chicken thighs into the slow cooker and pour the sauce over the chicken. Stir well to coat.
  3. Cover and cook on low for 4 to 5 hours until the chicken is tender.
  4. In a small bowl, mix the cornstarch with water to form a slurry. Stir this mixture into the slow cooker in the last 30 minutes of cooking to thicken the sauce.
  5. Serve the chicken over cooked rice, garnished with sesame seeds and chopped green onions.

Notes

For a healthier version, use skinless chicken breast and replace brown sugar with honey or maple syrup. Add vegetables like bell peppers or snap peas for increased nutrition.
