- 1 9-inch pie crust (homemade or store-bought refrigerated roll)
- 1 small egg beaten with a bit of water (for an egg wash)
- 1/4 cup all-purpose flour
- 1/4 cup packed brown sugar
- 3 tablespoons granulated sugar
- 1/3 cup finely chopped pecans
- 1 teaspoon ground cinnamon
- 2 tablespoons cold unsalted butter (cut into small cubes)
- 3 cups very small diced yellow peaches (or canned peaches)
- 3 tablespoons peach preserves
- 1/2 cup granulated sugar
- 3/4 cup sour cream
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
- 2 tablespoons cornstarch
- Pinch of salt
Instructions
- Preheat your oven to 425°F.
- Lightly coat a 9-inch pie plate with nonstick cooking spray. Roll out pie dough and press it into the pie plate; brush with egg wash. Refrigerate.
- In a small bowl, mix flour, brown sugar, granulated sugar, pecans, and cinnamon. Cut in butter until coarse crumbs form and refrigerate.
- In a mixing bowl, combine diced peaches with peach preserves and transfer to the pie shell. In another bowl, whisk together granulated sugar, sour cream, egg yolks, vanilla extract, flour, cornstarch, and salt. Pour mixture over peaches.
- Place pie on a baking sheet and bake for 30 minutes.
- Remove pie briefly from the oven; sprinkle chilled streusel topping over it. Return to the oven for an additional 15-20 minutes until golden brown.
- Cool completely on a wire rack, then chill in the refrigerator overnight.
- Serve each slice with vanilla ice cream.
Notes
For a festive touch, garnish with whipped cream, fresh mint, or caramel sauce. Use whole wheat flour for added fiber and replace sugar with honey or maple syrup for healthier options.
