Description

A hearty and flavorful baked omelet perfect for breakfast, filled with ham, cheese, and vegetables.


Ingredients

  • 2 tablespoons butter
  • 1/2 small onion (diced)
  • 1/2 small green bell pepper (diced)
  • 1/2 small red bell pepper (diced)
  • 1 cup diced cooked ham
  • 8 large eggs
  • 1/4 cup half-and-half (or whole milk)
  • 3/4 cup shredded cheddar cheese
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon coarse salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 400 degrees F. Coat a 10-inch round baking dish with nonstick spray.
  2. In a large nonstick skillet, melt 2 tablespoons butter over medium heat. Sauté 1/2 diced onion, 1/2 diced green bell pepper, and 1/2 diced red bell pepper until softened, about 5 minutes.
  3. Add 1 cup diced cooked ham and continue cooking for about 5 more minutes.
  4. In a large mixing bowl, beat together 8 large eggs and 1/4 cup half-and-half until well combined. Stir in 3/4 cup shredded cheddar cheese, the ham and vegetable mixture, 1/4 teaspoon onion powder, 1/4 teaspoon garlic powder, 1/4 teaspoon coarse salt, and 1/4 teaspoon pepper.
  5. Pour the mixture into the prepared baking dish, spreading it evenly.
  6. Transfer to the oven and bake for about 25 minutes, until the eggs are puffed and browned around the edges.
  7. Once baked, slice into wedges and serve warm.

Notes

Feel free to substitute the ham with turkey or bacon, or skip the meats entirely for a vegetarian option. Incorporate more veggies for added nutrition.
